What decides it

We map the high and low points rather than taking one ceiling measurement. The largest variation determines cabinet height, crown size and whether localized repair is worth doing first.

Why this is worth doing properly

The wrong layout makes new finishes expensive camouflage. We draw the aisles, appliance swings, plumbing routes and structural changes first, while every inch can still be corrected without reordering a cabinet.
