Beams and headers
Kitchen beams and headers are sized to the span and load, with joist direction determining whether the finished beam is flush or dropped.
What decides it
Whether the beam can disappear into the ceiling depends on joist direction, mechanical conflicts and available depth. A dropped beam may be the cleaner choice when forcing a flush condition would spread work through the floor above.
Why this is worth doing properly
The wrong layout makes new finishes expensive camouflage. We draw the aisles, appliance swings, plumbing routes and structural changes first, while every inch can still be corrected without reordering a cabinet.
