The tradeoff is visual separation versus one large, flexible surface. A raised level can screen dishes and splashes, but it also narrows the usable depth on both sides.

A good island gives you prep space, storage and seating without taking away the aisle. We size it from the clearances outward, then plan the drawers, overhang, power and any plumbing inside it.
